I made this today for the first time and it was delicious. Extremely moist and dense, I used honey and substituted pecans for the walnuts since that is what I had on hand. My husband was surprised there was zucchini in it. I am curious if anyone has tried substituting applesauce for the oil to lighten it up a bit. I would love to know how it turned out.
