This doesn't help with the "too-hot-today" question, but I'll just mention that I've had a lot of luck with using the bread machine through the dough cycle (i.e. doing the mix and first rise in the bread machine, then taking it out, shaping it into the pan, and then baking it).

Effectively the bread machine is serving as my proofing box.

(Also, I'll mention that about half the time I'll bake turn the dough into a boule and it this in my "Bread Baking Bowl". A nice variation. Which, in point of fact, is exactly what I'm in the middle of this afternoon as I type.)
