Thanks for those questions! Pumpernickel flour is the same thing as whole rye flour, there's no difference between the two. While you can order other types of rye flour online (from us or a Canadian retailer), using dark rye flour in recipes that call for lighter rye flour is possible, but may be tricky. Your best bet may be increasing the amount of bread flour and decreasing the amount of rye, in order to ensure your dough has enough strength to hold up to all the added bran that a whole grain flour (or closer to whole grain, in the case of dark rye) will add.
