Betsy, that's an excellent question! The potato flour retains more moisture than wheat flour does, so it has the effect of making your breads beautifully soft. It's wonderful added to cinnamon rolls and other yeasted treats for that pillowy feel. As far as your homemade pickles go, they should only make things more delicious! Sauerkraut juice also works well if you have it on hand. Happy baking! Kat@KAF
