Question: what is the purpose of the potato flour or potato flakes? I want this to be parve (without dairy) and potato flakes often contain butter and milk, so I'd use the flour. I noticed potato flour/flakes in a sourdough coffee cake recipe and found it intriguing. I haven't looked yet and I'm curious if there's a similar recipe that's sourdough instead of a yeasted dough. My mom is extremely excited for me to try this recipe. Also, I make lactofermented pickles and we have copious amounts of pickle juice around. I'm assuming that won't mess with things? cheers.
