Sure, you can always let rolls rise in the fridge; it's a guessing game to know how long to let them rise at room temperature before refrigerating (depends on the amount of yeast in your recipe, how cold your fridge is, and when you want to eat them), but once you do it, make a note and forever after you'll know the exact right amount of time.
