Do you think this would work well with King Arthur's Gluten-Free Flour? Would I need to add xanthan gum? We haven't tried a GF version of these, Kim; but you might try substituting our recipe for gluten-free pie crust for the pastry, and adding the filling as directed. That should work - PJH
