I. Love. This. Recipe.
My 1yr old is devouring a version that stood up to eliminating ALL the sugar AND the salt, cutting the oil in half, subsitituting water for milk (he guzzles milk so no need for extra here), AND including a 12oz bag of cauliflower/broccoli/carrots (for a double batch of pancake batter) that I puréed after steaming. Even I like them! And a splash of applesauce? Heavenly!
Now to make a batch of the original favorite for us grown-ups who don't need our veggies hidden... :)
