Wow, I'm so glad I decided to re-read all the comments. This morning I reached my egg breaking point. I just didn't want another egg for breakfast! I was going to make "All Star Muffins" from The Baker's Companion but alas, I only had 2 eggs. I decided to revisit this recipe, which is delicious and fast. The last time I made it I made some pancakes and froze them and kept some batter in the fridge for the next day. However, I am trying to get my weight down, so pancakes twice in one week isn't in my gameplan and I'm not that happy with defrosted and reheated pancakes. So I was thrilled to see Danielle's comment and Susan's reply. I live alone and there are two cups of batter left from this recipe. Now I know I can freeze it for later use. I'm so happy. Also, my pancakes turned out even better than I remembered!
