So sorry, Amy – perhaps you measure flour differently than we do? Some folks like to measure by dipping their cup into the canister, tapping to settle, then leveling off. We prefer to sprinkle flour into the cup lightly, then level off - no tapping. The difference in flour can be as much as 3 tablespoons per cup, depending on what method you use. And extra flour would definitely make the pancakes tough and dry. And, of course, weighing ingredients will always be the most accurate. I hope you try these again if you think excess flour might be the culprit! PJH
