These pancakes were tough and kind of dry. I am afraid this recipe is not correct. There should only be one egg with this much flour and milk. I have compared it to other recipes that I use and they use only one egg. I thought the part "Beat the eggs and milk until light and foamy, about 3 minutes at high speed of a stand or hand mixer" might make them wonderful, but sadly they were not. Very disappointed!
