Hi Lisa, this recipe will indeed work if assembled and refrigerated the night prior to baking and you are also correct that this recipe needs to be doubled to fit into a 9x13 pan adequately. I would recommend increasing the baking time by 30-40% to account for this by it never hurts to check early and often for doneness!
