Just curious--what purpose does the clear-jel/cornstarch serve in this cake? As a starch, it helps retain moisture and keep the cake from staling too quickly; it also replaces a bit of the flour, thereby lowering the overall gluten content and "tenderizing" the cake. Good question, Colleen! PJH
