Hi! I have two questions: 1) Could I substitute regular cocoa powder for the dutch processed cocoa powder? 2) Instead of the espresso powder could I use 1 1/4 cups freshly brewed coffee? Thanks so much! Sheri, you can definitely use coffee - and, since you're adding acid with the coffee plus acid with the natural cocoa, you might want to increase the baking soda to 3/4 teaspoon Good luck- PJH
