We haven't tried it yet Eliza, but we're hoping another baker chimes in! As far as the chemical reactions in the batter you can simply do a one to one substitution with buttermilk- no need to worry about making any other tweaks. But we'd love to hear how the change in flavor makes the donuts taste!
