I just tried baking these cupcakes, but without the powders (which I didn't have on hand). I was after a really intense citrus flavor and doubled the quantities of all of the zest substitutions, as well as adding 3/4 tsp. of lemon oil to the batter. The batter ended up with the intense flavor I was looking for, but the baked product had hardly any citrus flavor at all - in fact, it was disappointingly bland!!! What happened to the flavor? I've had this problem with a lot of the products I try to flavor with lemon zest and oil...is there some reason the flavor "bakes away??

Thanks for your comment. One of the things we love about the powders is that they don't bake away in the heat, the flavor stays true. To boost the flavor, try brushing on a flavored syrup after the cupcakes are baked, or adding a zing of zest in a filling or frosting. ~ MaryJane
