That's a great question, Marvinia! It's especially tricky because you can't grease the pan for this cake, as the batter needs to be able to cling to the sides as it rises. Is your pan an older one, by any chance? It may be that tiny nicks and scratches in the pan surface are causing your cake to stick more than usual, making it harder to clean out.
