Took this idea and made a vegan version that turned out FABULOUS! I used our standard homemade pizza crust (1/2 WW bread flour, 1/2 AP, nutritional yeast, thyme, garlic, onion powder, and a healthy scoop of potato flakes), soy curls (rehydrated with BBQ sauce and hot water, baked, then tossed in more BBQ sauce), Daiya Mozzerella (a vegan mozzerella that is really quite good) and sauteed red onion.
It turned out great, and the hubs, who is quite intolerant of messing around with the perfection of our standard at home pizza, declared it a huge success - as evidenced by the dramatic lack of leftovers.
