The more butter you replace the drier your finished baked goods will be, Debra. For a cookie like this I would start with a 50/50 blend (while replacing the butter one for one with applesauce) and seeing how you like the finished results. Swapping out ingredients in a recipe will always change the flavor and texture a bit so start with a smaller change and then move toward the bigger changes so you can really see how it effects the finished cookies!
