Hi Clara! Who doesn't love a freshly baked cookie? We like the way you think! This dough could be kept overnight in the fridge but we wouldn't recommend leaving it in there any longer than that. You most certainly could scoop the dough and then freeze the unbaked cookies if you'd like though! The unbaked dough can be kept in the freezer for up to 3 months. Happy baking!
