Hi Valerie. I think your suggestion about using the middle rack in the future will be the best way to proceed. Each oven can work a little bit differently, and learning what works best for your home oven set up will be imperative to getting a nicely executed bake. For pies in particular, I love to use a glass pie dish in order to be able see how well the bottom crust is cooking. I hope you found some of this helpful. Happy baking!
