I have made my grandmother's Lemon Chess Pie for decades. Here is my recipe:
1 stick butter (1/2 C), melted
1 1/4 C sugar
4 large eggs, beaten till thick and lemon colored
grated rind of 1 lemon
juice of 1 1/2 lemons
We never put cornmeal in lemon chess pie--only in 'plain chess,' which is vanilla chess.
