hi - I have a question about one comment in your instructions: 'Cover the pizza, and let it rise for about 2 hours'. What are you covering with? plastic wrap? towel? something else? I usually let my dough rise naked-ly and then top, but I like your idea better...just need to know what to cover with. thanks for all of the GREAT ideas and tastes! Deb, I've saved some big plastic deli covers - you know, like that come on top of a cold cut platter. I have a rectangular one, and a round one, and use them to cover pizzas and rolls, anything that's relatively short in height, even after a complete rise... PJH
