Hi - I use a gluten free cornbread recipe on the back of the corn meal (flour mixture=sorghum, potato starch, tapioca and cornmeal). Since I am vegan, I do not use eggs and when I used egg replacer corn bread was gummy inside and it did not rise; I used the Zanthan both times but still cornbread did not rise and was gummy inside. BTW, I followed cooking time. What am I doing wrong?
