Would this recipe work as muffins? Obviously, you would cook it for a shorter time. Before I started eating gluten-free, I often made cornbread muffins instead of bread, and muffins would make it easier to freeze any leftovers. Don't see why not - I say go for it, and please let us know how they come out, Janice - PJH
