Hi H., I suspect freezing fresh strawberries in your scone dough is going to turn out differently than using frozen strawberries from the start, but you might want to try a small batch experiment and see how they turn out in comparison to the lovely scones you normally serve. You might also want to experiment with roasted strawberries in your scone dough, which will freeze nicely.
