The pie pan is just to add a little structure, which makes this type of pie easier for beginners to manage. We think that the pan will understand not being eaten if it gets to come out of the cabinet and hang out with its friends flour and sugar and sugar and sugar for a while, but if yours is prone to holding grudges (or you don't have a need of it), feel free to save your pie pan for another day.
