Hi Autumn, the recommendation here, as on the recipe page, is to use the egg white glaze if you want to add seeds to the top of the buns. This will require using an additional egg, but only the yolk part will go into the dough, the egg white is reserved for the glaze. Adding an extra yolk to the dough (in addition to the egg called for) will just give your buns a little more richness and color.
