This online recipe includes steps that are not in the King Arthur Baker’s Companion cookbook. The cookbook calls for 8 oz water (no range), 3 1/4 c flour. Combine all ingredients and knead until you have a soft smooth dough. Rise 1 hour. Second rise 30-40 min. No mention of egg wash. My buns turned out dense and blah looking on top. I will be comparing the book to the online recipes from now on.
