Hi Jan, we've found that the best way to freeze unbaked buns is to go straight from kneading the dough to shaping the buns and then putting them in the fridge. You'll skip the first rise entirely. This helps prevent activating the yeast and then freezing it, which often results in some of the yeast cells dying and your final product not rising quite as much. When you're ready to bake, let the buns thaw in the fridge overnight while loosely covered with plastic wrap. Once they're nice and puffy, you can bake them as directed in the recipe.
