Made these buns for the second time today; delicious but I need help with dividing and shaping. After first proof in your small dough doubler bucket, the dough comes out of the bucket in a round shape. I deflate and then it's more round/oval. My problem comes in trying to divide into equal pieces. I try to do it by weight but each piece is off enough that I'm tearing from one and sticking on to another. I also never seem to get a nice round ball, especially on the bottom; the buns do not come together on the bottom and are lumpy. In your blog you go from showing the whole mass of dough to nice even pieces; how do you do that? And any tips on how to roll dough into a ball that is smooth top to bottom would be much appreciated. I'd watch any videos you direct me to as well. Thanks!
