That's what I do - after the first rise I shape them, wrap each one in plastic wrap sprayed with Pam, then put into a freezer bag. For just the two of us, we can have freshly baked burger buns whenever the mood to grill out strikes us. Never did like to have to buy a package of 8 buns. Also make super hot dog buns.
