I was one of the original members of the old Baking Circle and Moomie was one of us. I can't tell you how many times I've made these buns and they're still my favorites.
I've made a few changes through the years. First of all, I substitute 1/3 cup of potato flour for 1/3 cup of the AP, and I substitute a cup of KAF organic white whole wheat for a cup of AP (I only use KAF's organic flours because I like the results I get with them), The potato flour makes the buns softer and keep better and the White Whole Wheat gives them a nice wheaty flavor and texture. I like Moomie's additions of onion and granulated onion and I sometimes caramelize onions to put on top of the buns toward the end of baking.
PJ, Trader Joe's organic ketchup puts Del Monte and all the others to shame.
