Good question, Dana. You'll want to brush the buns gently, and a little deflation is normal. Not to worry, they will pick back up in the heat of the oven. If you notice significant deflation when you gently brush the buns, that can be a sign that your dough has over-proofed. In this case the buns will still pick back up some in the oven, but not fully, as the yeast has exhausted its resources.
