Made these today. Made half burger and half doggie rolls. There's only two of us, so it's nice to have a choice. These were delicious. Hubby's compliments to the King on the flavor and texture. I have one area that I need help in. I'd like the bottoms to be less hard. I mixed these in a Welbilt Bread Oven and I baked on Wilton pans with a sheet of parchment in a Maytag convection oven. I did do one thing that may have hurt/helped? me. I was running out of time and for the rising after the rolls were shaped I experimented with something I never did before. In my CLEAN dishwasher, I poured a few cups of very hot water, set the trays across the top rack , closed the door and turned the control to dry. It was a nice little proof box. This is the only thing I haven't ever done before. Would this affect the way the dough acted? If I can correct this little hard bottom problem, I'd probably use this recipe for family picnics, the rolls are so much tastier than plain old bakery rolls. Oh a thought as I typed, would dusting the parchment with a little cornmeal have helped? Sorry this has become so long, would really appreciate any input. Thanks, Ruth Ann
