There could be several reasons why this happened Christine. Any change to the sugar or salt could have altered the browning. Also, did you make sure to brush the buns with butter before baking? The butter helps the buns to brown better (along with imparting a delicious flavor). Please feel free to call our Baker's Hotline if you want to troubleshoot over the phone, we'd love to chat.
