I watched a video of Jeffrey Hamelman shaping buns like these and am happy to say that I have mastered the technique. I want to share the recipe and video with a friend, but I can no longer find it; can you please point me to it? It is a masterpiece! Did I mention how much we love these buns? They don't fall apart with saucy fillings like pulled pork barbecue! They hold up to the last bite. I do add diastatic malt to the recipe for added structure; I'm not sure that's what does it, but whatever it is, I'll never buy another bun unless I'm forced to.
