It's hot in Virginia today, yet I had some very ripe bananas that were calling out "banana bread." My solution was to use this recipe and bake mini-muffins in my toaster oven. The recipe made 42 mini-muffins and they are perfect bite sized treat. I baked them at 350º for about 15 minutes. The whole wheat flour, dark brown sugar, and honey make for a tasty muffin! What a great idea! Toaster ovens and the Zo bread machine (perfect for desserts and entrées, as well as breads) are wonderful during this hot weather. PJH
