I, also, have made these for decades. I don't use jam as I adore unadulterated almond flavor (using Amaretto instead of milk or water in icing is mmmm!). However, I divide my dough and batter into thirds (10" x 2" x 3 strips placed far apart on air bake Cook sheet).
This serves 2 purposes for me: when cut diagonally the pieces are a more compatible size placed in a display of holiday cookies, and the middles are perfectly cooked. Using an airbake also assures of golden brown bottoms and perfectly cooked tops, not brown bottoms.
