Hi Peggy! Our Instant ClearJel is a cold-process thickener, this means it doesn't need to be heated to activate its thickening and stabilizing powers the way cornstarch or flour need to. This also makes it tricky to replace. In this case, if you don't have any on hand you could leave it out just keep in mind that the filling won't be as stable. Happy baking!
