Dried milk stores really well. I used ancient (pre-pandemic) dried milk today when I made these pretzels and they were delicious. Also, I followed the suggestion to chill 1 hour after shaping, boiled with baking soda 20 seconds per side, and baked at 425 convection 15 minutes. Fabulous pretzels!
