You can indeed, Aunika, but it will be a bit complex. Because sourdough bread relies so heavily on the gluten structure in dough to work well, simply transforming a wheat recipe to a gluten-free one isn't always as easy as a simple swap. But it is doable. For this we've got a plan for you. Rather than trying to adapt this recipe, have a look at our Gluten-Free Soft Pretzels. To that, you can add our Gluten-Free Sourdough Starter. It wont work the same as a wheat-based starter, but it will add that great sourdough tang. And lastly, check out our guide on Adding Sourdough to a Recipe for guidance on how to make it all work. It's definitely a complex experiment, but it will also be lots of fun, so enjoy, and let us know how it works out.
