I had never been interested in the time investment for sourdough, but my neighbor gave me some starter and I immediately fed it and made these pretzels with the discard (about 1/4 of the recipe - measured proportions of everything in grams with my food scale). They were delicious! Made them again the following week (along with an actual sourdough bread).
