Hi Adrian! There are a couple of things you can try. One is to brush the pretzels with the solution when they're on a well-greased cooling rack so that any extra will drip down. Then, once it's dried down a little after a minute, move it to the sheet pan. The other is to double up on your sheet pans and use two to really insulate the bottom.
