You're welcome to give it a try, Rob! Rise times could potentially take hours longer so keeping an eye on the dough rather than the clock will be key to successful pretzels. Keep in mind this dough doesn't rise much anyway, so letting it rise in something in which you can accurately view the growth will help a lot, like a large glass measuring cup covered with plastic wrap.
