How would you keep these? And for how long? I'd like to double the batch and keep some in the freezer. Do you think that will work? I generally don't freeze bread, but I'm thinking since I'm going to put them in the toaster anyway...? Oh, and did you fork-split or do it with a knife? I suppose I'd better split before I freeze, huh? Thanks so much! Fresh baked goods keep less than store bought as we generally don't use additive or preservative ingredients to extend the shelf life. Blog pictures look like these were split with a knife. The most important question for you to answer to solve the split-before-or-after-freeze question is efficiency. Do you want to head to the toaster and just pop in the muffin slices (if so, then pre-slice before freezing) or take out knife, cutting board and split the muffin at the time you'll be toasting (then freeze whole without the pre-slice).
