You had me at lemon! Boy oh boy, lemon and spring just go together for me. I'd make this today but for lack of the lemon powder and buttermilk powder. I'm off to the King Arthur store to check those out. I made a lemon yogurt cake this week that seems like it would be similar, but pudding cakes are the bomb! Love them.
