I wonder if you could make these gluten free without using any wheat flour? Samantha, I'm betting you could use our Gluten-Free Multi-Purpose Flour as a substitute for the flour in the recipe. I think it should work, given the cookies are already crumbly from the nut flour - crumbly is how they're supposed to be, so lack of gluten isn't as big a deal. PJH
