I love your recipes. Would it be too much of a challenge to make a gluten-free Wedding Cookie recipe? I am not too much of a chemist... Happy Holidays! Graziana, I've passed this along to Amy, our GF blogging specialist. Let's wait and see if she can come up with something sometime... In the meantime, you might try this Wedding Cookie recipe, substituting our GF flour blend for the AP flour, and adding 1 teaspoon xanthan gum. No guarantees, but it's worth a try... Good luck. PJH
