Having NO Italian heritage on either side of the family, I've never even heard of Easter Pie--until today!!! We're lucky enough to be having family visit near Easter this year, so you can bet this will be on the menu! I had an idea as I read your blog: I have a very small cross-shaped cookie cutter, and I'm going to use that for cutting my steam vent! One question: would it be possible to make these ahead and refrigerate them for a few days? I don't want the crust to get soggy, and I think it just might do that. Actually, it's fine being refrigerated for a few days. I usually make mine on Thursday, and we eat it Saturday/Sunday. It starts to get dried out the longer it's in the fridge, but it doesn't seem to get soggy. Enjoy - PJH
